Sunday Meal Prep

With our crazy busy schedules, meal planning and prepping has made life so much easier to manage. Especially since my kids are starving and clamoring for food by 4:30 most days! Sunday has come to be my prep day when I get all of our dinners for the week ready to do. Chopping veggies, making marinades, thawing things from the freezer all at once so that during the week all that needs to be done is the actual cooking. It saves me tons of time! I thought I would give a sample of a standard week for us so you can see how it works.

SUNDAY: Homemade pizza
MONDAY: Roast chicken, carrots and potatoes
TUESDAY: Chicken & rice soup (made from leftovers)
WEDNESDAY: Carne asada with chimichurri, corn on the cob, asparagus
THURSDAY: Pasta shells with pesto
FRIDAY: Dinner out

PREP LIST:
*make pizza dough
*thaw-tomato sauce, pesto, veggie stock
*add chicken and veggies to crock pot, add spice rub, put in fridge
*make chimichurri
*marinate steak

SPICE RUB:
salt, pepper, onion powder, garlic powder, paprika, olive oil, fresh parsley

CHIMICHURRI:
fresh parsley and cilantro, lemon juice, grapeseed oil, crushed red pepper, salt, white wine vinegar, minced garlic

MARINADE:
olive oil, chipotle tabasco, garlic, adobo seasoning (Goya brand)


I keep all veggie scraps in a bag in the freezer to make stock later
