Drankin & Bakin: Brownie Cookies and German Lager

If you are a regular reader of my posts, you'll know that I love chocolate. If all desserts were either chocolate or lemon, I would be one happy mama. Along with chocolate, I love dark beer so very, very much. So a sleepy Sunday calls for SchwartzBier and Brownie Cookies!


This is my favorite Devil's Backbone beer, and currently in my top 5 favorite beers of all times. It is dark and rich, smooth and toasty. So drinkable.

Brownie Cookies are the perfect combo of two delicious treats and are really simple to make. With only 8 ingredients, even a novice baker can't go wrong.

1 cup flour
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
12 oz chocolate chips
1 cup sugar
3 eggs
1 stick butter, sliced into pieces
1 teaspoon pure vanilla extract

Whisk dry ingredients, set aside. Cream sugar and eggs together for 2 minutes, until pale yellow and slightly thick. Melt chocolate and butter in microwave safe bowl at 30 second increments until smooth, stirring after every 30 seconds. Add chocolate to mixer, mix well. Add vanilla, mix well, then add dry ingredients and blend until fully mixed. Refrigerate for 30 minutes so it will be easier to scoop. Scoop onto parchment lined baking sheets, two inches apart. The dough is sticky, be warned :) Bake in the upper and lower thirds of your oven at 350 for 14-16 minutes, until they are not glossy on top and are a little cracked and crinkly looking. Let cool for a few minutes on baking sheet and then cool completely on wire rack. 

The dough is really sticky, but holds together well. They cookies spread quite a bit, so be sure to place them 2 inches apart.



The finished product! Make sure you click on this picture so you can get a good close-up of those beautiful brownie-like crinkles on the top. I cannot tell you how delicious these are. I think next time I'll add some sea salt to to the tops :)

An important part of Drankin & Bakin is finding the right pairing of drank to dessert. You really cannot go wrong with a good dark beer and anything chocolate, in my humble opinion. This is a great combo to start with!
